The Recipe

To prepare your Pesto Chicken Quinoa Bowls, you’ll need: two chicken breasts, one cup of quinoa, a handful of fresh basil leaves, one garlic clove, half a cup of cherry tomatoes (sliced), a quarter cup of grated Parmesan cheese, two tablespoons of olive oil, salt and pepper to taste. Start by preheating your oven to 375°F (190°C) while rinsing the quinoa under cold water—this helps remove its natural coating known as saponin that can impart a bitter flavor.

In a medium saucepan over medium heat, combine one cup of quinoa with two cups of water. As it begins to simmer gently—the sound reminiscent of soft bubbles breaking—you can cover it and reduce the heat to low. Let it cook for about 15 minutes until all the liquid is absorbed. Meanwhile, season your chicken breasts with salt and pepper before drizzling them with olive oil in an oven-safe pan.

Once your oven is hot, place the seasoned chicken in there for around 20-25 minutes or until fully cooked through at 165°F (75°C). While they roast away—filling your kitchen with an enticing aroma—you can whip up the pesto sauce by blending together those fresh basil leaves, garlic clove, remaining olive oil, Parmesan cheese until smooth.

After removing the chicken from the oven and letting it rest for five minutes (a crucial step!), slice it thinly against the grain before assembling your bowls. Fluff up that quinoa—it should have taken on a fluffy texture—and divide it among serving dishes. Top each bowl generously with sliced chicken breast and drizzle over those bright green pesto swirls.

Add halved cherry tomatoes around for color—they add bursts of sweetness—and sprinkle extra Parmesan on top if you desire! This vibrant dish not only looks appealing but also tastes heavenly—a satisfying blend of earthy flavors from the quinoa mixed perfectly with zesty notes from freshly made pesto.
